When any link in that chain degrades — a weakened heating element that draws less power than it should, a temperature sensor that reads high and fools the control board into cutting heat too early, or a thermostat that has simply drifted over years of use — the oven settles at a temperature noticeably below what the dial or display shows. The oven isn't broken in a catastrophic sense; it's measuring or heating incorrectly.

Several things accelerate this drift. Self-cleaning cycles run at extremely high temperatures (around 900°F) and put enormous stress on both heating elements and sensors — it's common for an oven to start running cool in the weeks after a self-clean. Heavy use, age (most ovens are reliably accurate for seven to ten years before components begin drifting), and power surges can all contribute. A bake element that is partially failed — not fully burned out, but cracked or internally degraded — is particularly deceptive because the oven will still heat up and appear to be working normally, just consistently short of the target.

The single most useful thing you can do right now is place a standalone oven thermometer — they cost under $15 — on the center rack, set your oven to exactly 350°F, and let it fully preheat and stabilize for 20 minutes. If the thermometer reads more than 25°F below 350°F, you have a confirmed problem worth diagnosing rather than a calibration quirk. That gap number will also help you determine whether you're dealing with a sensor drift (usually a consistent offset) or a failing element (temperature that climbs slowly, plateaus early, or cycles erratically).

A gas oven with a failing igniter will eventually fail to light at all, which is safer than you might expect (modern gas ovens won't release gas without a confirmed ignition) but means the oven simply stops working. In none of these cases does waiting improve the situation or reduce the eventual repair cost. The practical consequence in the meantime is less obvious: consistent underbaking means food — particularly poultry — may not reach safe internal temperatures when you follow standard timing and temperature guidelines.

    I want to offer a slightly different experience — mine turned out to be the igniter on my gas oven, not a sensor. The oven would eventually get hot but it took nearly 45 minutes to preheat. The igniter was glowing but weakly, so the gas valve wasn't opening fully. That one I did call a technician for since it involved the gas line, and I'm glad I did. The repair was about $180 all in.
